About Us

We are BOTANICUS, an evolutionary cocktail bar in the Poblenou neighbourhood, where the art of mixing drinks is combined with the science of botany and microbiology. What does evolutionary mean? It means that we process fresh, seasonal raw materials and do not pasteurise the fermentations. This involves the use of living material, rich in microorganisms, which evolves over time and therefore requires constant research to balance its flavour.

We also process all cocktail ingredients at the bar using advanced, multidisciplinary techniques: distillation, maceration, temperature control, enzymatic processes, vacuum, and traditional fermentation methods. We make our own vermouth, distil our own gin, and produce our own traditional liqueurs.

Every sip is the result of extensive research, tradition and experimentation. We carefully select our raw materials, maintaining high quality and minimising waste to protect the environment.
